Microwave: Mug O'Fried Rice & Egg Using Leftovers

Microwave: Mug O'Fried Rice & Egg Using Leftovers (LO)
 

Ingredients:

A Dab Vegetable oil
1 Egg
6 Tspns LO Cooked rice
1-3 Drops Hot sauce
2 Tspns Mozzarella cheese, shredded
Ground Black pepper, to taste
1 TBspn LO Canned salsa
1 TBspn LO Canned corn, drained and rinsed
A dollop of Milk
A dribble of Lime juice

 
Process:

Use a dab of oil to coat bottom and sides of mug.
Add remaining ingredients to the mug.
Whip and stir mixture thoroughly.
Microwave on high for 2 minutes.
Remove.
With a fork, check bottom of mug to make sure there is no uncooked liquid left. If so, microwave 30 seconds or more until all liquid has cooked.

Eat straight from the mug or use mixture to make a Toast Topping.

Microwave: Mug O'Chilaquiles

Good Morning!

Chilaquiles is a delicious Mexican dish.

Plus, you can use your leftover stale corn tortillas.

It's been a long time since I made a recipe that was perfect the first time around and often when I make the recipe again, it just never tastes as good as the first one.

My eye jumps to Mug recipes that scroll by on YouTube or Twitter, so I was thrilled to see a mug recipe for Chilaquiles.

As usual, I did not have all the ingredients the recipe called for, like sour cream, so I made my own.

 

Microwave: Mug O'Chilaquiles (Toast Topping)

Pre-preparation:

Ingredients:

Leftover corn tortillas
Cream
Apple cider vinegar
1 slice of multi-grain bread

 

DIY Tortilla Chips

Use leftover corn tortillas.Spread tortillas over on a microwaveable plate.
Microwave on high 2 minutes.
Remove.
Turn tortillas over.
Return plate to microwave.
Microwave on high 1-2 minutes.
Remove.
When tortillas have cooled, break them into small pieces.
Save unused tortilla chips and pieces in a closed container.


DIY Sour Cream

In a refrigerator container with a lid, add 3 TBspns of cream.
Add 1 TBspn of apple cider vinegar to cream.
Stir cream and vinegar together.
Cover and store in frig for 10-30 minutes.

Make toast.




Ingredients:

 
1 egg
2 TBspns milk
Ground black pepper
3 Drops hot sauce
3 TBspns mozzarella or monetary jack cheese, shredded
1 Tspn Dry onion flakes
Handful of DIY tortilla chips, broken into small pieces.
3 TBspns canned salsa, drained
Toppings: Mayo, DIY Sour cream, Dry parsley or cilantro (optional)



Process:

 
In a microwave-safe mug:
Add egg.
Add milk.
Add black pepper.
Add hot sauce
Whip together with a fork.

Add cheese and onion flakes to the egg mixture.
Stir.

Add tortilla chips and salsa.
Stir.

Microwave on high for about 2 minutes, or until cooked through.

Spread mayo over toast.

Add egg mixture to top of toast and spread over surface of toast.

Garnish with about 2 TBspns of sour cream, and sprinkle with parsley or cilantro.

Microwave: Mug O'Something - Kitchen Sink Variety

I have been a small meal eater for over 20 years.

It began when my family went to a restaurant and when my meal came, I was shocked. The plate was piled high with food. There was no way I could eat all that food, so I asked for a doggie bag, immediately. Then, I divided the meal in half and saved the rest. I have been doing that ever since.

I consider a burrito a meal. Previously, at home, when I cooked casseroles or one-pot dishes, I divided them into single serving containers and froze them for work lunches or dinner.

But, it was when I started making and collecting recipes for my next cookbook, I began to focus on what I called:

Small meals
Spoonful snacks
Savor the flavor bits, and

Micro-nutrients

When I make a meal, I think, what does it provide from the concepts of MyPlate:

1 serving vegetables
1 serving fruit
1 serving protein

1 serving grains
1 serving fiber


I am also using the term "serving" liberally. I consider a spoonful of protein or fiber a serving.

Toast toppings and mug recipes probably triggered several of these ideas.

With a toast topping or mug recipe you could add one bit of something healthy mixed in with the rest of the ingredients.

For example, today, I wanted to make a toast topping with one egg.


In these COVID19 Crisis times, using one egg in one recipe seems extravagant. I am now pondering how to use one egg in a recipe that makes more than 1 serving. Frittatas come to mind.

After perusing my frig, what did I have to make a healthy toast topping?

I had some chorizo left. When I buy chorizo, I slice it into wafers and freeze them. Then, when I want to add some chorizo to a recipe, I take one wafer, crumble it into a mug and microwave it for 45 seconds to cook it. I do this because chorizo is a meat and I want to make sure it is cooked.


I realize that my definition of "healthy" is pretty broad.  In essence, it's not a bag of potato chips for dinner, or 10 chocolate-filled cookies, or cupcakes. I generally, eat chicken and fish, and some pork. To me, cooking beef is too much effort and the taste is nothing to get excited about.

Then, I added the egg and a dollop of milk.
 

But, I wanted some vegetables, too. Attempting to stretch my vegetable supplies, I used two spoonfuls of my Rice, Chicken and Vegetable Stew. I added a few drops of hot sauce and a few grinds of ground black pepper.

Then, I stirred and whipped the ingredients thoroughly. Then, microwaved the lot for 1:30 seconds on high (high is the only setting, I have).

Meanwhile the toast was ready. I was out of mayo, what should I use to coat the toast? What did I have? I had Italian dressing, ketchup, mustard, thousand island dressing, and vegetable oil. I choose the oil.

I added a dab of oil onto the toast and smeared it around.

When the egg mixture was ready, I stacked it on top of the toast and then mashed it down and sprinkled a bit more ground black pepper on top.

The results were tasty.

Now, did I get the daily recommended amount of vitamins, minerals, grains, and protein, etc? No, but I did get a micro-amount of many of these items.


You'd think I'd be slim because of all these small meal tactics, but I am overweight. I think it's because I like late-night snacks, even though they are small. Plus, when I used to gather with family and friends, eating and talking were usually the main events.



Microwave: Mug O’Something - Kitchen Sink Variety


Ingredients:

1 Slice of Chorizo, crumbled
1 Egg
1 Dollop of milk
Ground black pepper to taste (Optional)
1-2 Drops of hot sauce
1-2 Tspns of Rice, Chicken and Vegetable Stew or find something in your frig to add
1 Slice of bread
A Dab of oil


Process:

Make a slice of toast and set aside.
After crumbling the chorizo into the mug, microwave on high for 45 seconds.
Add egg.
Add dollop of milk (I used powdered milk mix).
Add some ground black pepper to taste.
Add drops of hot sauce.
Add Rice, Chicken and Vegetable Stew or your addition of choice.
Stir and whip ingredients thoroughly.
Cover mug (I use a saucer).
Microwave on high for 1:30.
Add a dab of oil to toast top.
Dump egg mixture on top of toast.
Smash it down and spread over toast.

Hotplate: Rice, Chicken and Vegetable Stew

I love the works of Dick Francis, a famous British Steeple Chase Jockey. I have lived in the worlds of horse racing that he created in my mind for years.

So, of course, when I found these recipes in an article about Jockey's diets (http://www.greatbritishracing.com/latest/the-jockey-diet/), I had to give them a try.

The idea for this recipe came from: Hayley Turner’s Chicken and Vegetable Risotto.

I have tried to make risotto several times without success, meaning the rice never got very soft. But, this turned out to be a tasty, filling dish.


Rice, Chicken and Vegetable Stew


Ingredients:

2 Cups water
1 Cube chicken bouillon
1-2 TBspns vegetable oil
1 Tspn onion powder
1 Tspn garlic powder
Ground black pepper
1 dash of hot sauce
1 cup rice
1 Can chicken, drained
2-3 TBspns frozen mixed vegetables
2 TBspns frozen red bell peppers, sliced
1 Can 8oz mushroom slices, drained and rinsed




Process:

In a 2-cup measuring cup, add water and bouillon cube.
Microwave on high for 3 minutes.
Remove, stir to dissolve bouillon.
Add oil to large pot.
Add onion and garlic powders.
Heat on medium.
Stir.
Add ground black pepper and hot sauce.
Stir.
Add rice.
Stir.
Cover.
Heat on medium for about five minutes.
Stir frequently.
Add 1/3 of chicken stock.
Bring to a boil.
Stir.
Reduce to a simmer.
Stir.
Cover.
Cook until the liquid has been absorbed.
Add remaining stock.
Stir.
Cover.
Simmer for 15 minutes or until liquid is absorbed.
Add vegetables to a large bowl.
Add black ground pepper.
Stir to mix.
Microwave vegetables on high for 3-4 minutes.
Add chicken to rice.
Stir to mix and break up chunks.
Allow mixture to heat thoroughly.
Add vegetables.
Stir and mix.
Let mixture heat thoroughly.




The recipe made a lot of stew. So, I froze half of it in single serving containers. I also added some of the stew to the Quick Tomato and Vegetable Broth to make a hearty soup.

Hotplate: Quick Tomato and Vegetable Broth

This is a "Kitchen sink recipe", meaning toss in whatever vegetables you can find in the frig.

Quick Tomato and Vegetable Broth



Ingredients:

4 cups water in a pot
1 cube tomato bouillon
1 dollop canola oil
5 dashes garlic powder
5 dashes onion powder
1 Tspn thyme, crushed
2 dashes oregano powder
2 dashes hot sauce
2 grinds ground black pepper
6oz leftover tomato-pasta liquid
6 snack carrots, diced
6 stalks celery, diced
1 1/2 cup cooked small white beans
3 TBspns canned mushroom pieces, drained



Process:

Add bouillon cube to pan of water.
Add oil.
Add spices.
Bring to a boil.
Add diced vegetables and beans.
Stir.
Bring to a boil.
Reduce heat to medium, to a simmer.
Add mushrooms.
Simmer for 15 minutes.

Hotplate: COVID19 Quick Chicken Vegetable Broth

I will be posting about my experiences self-quarantining.

I am a small portion eater to begin with but, after a recalculation of my pantry supplies, I decided to try making a soup to stretch my vegetable and protein stock. I adapted my Hotplate: Simple Chicken Vegetable Soup recipe as a trial.



Hotplate: COVID19 Quick Chicken Vegetable Broth


Ingredients:

1 Chicken bouillon cube
6 cups of water
3 Dashes Onion powder
3 Dashes Garlic powder
2 Dashes Hot sauce (Optional)
1 Grind black pepper

4 TBspns frozen mixed vegetables
1 Heaping TBspn canned chicken, drained
2 TBspns canned diced potatoes, drained and rinsed

Use What You Have regarding additions, I found:
2 Snack carrots, diced
2 TBspns canned salsa
Small quantity of cooked white beans



Process:

Add 2 cups of water to a microwaveable container
Add 1 bouillon cube to the water.
Microwave on high for 2-3 minutes.
Remove and stir until bouillon cube has dissolved.
Add stock to large pot.
Add 4 cups of water.
Add spices.
Stir.
Cover pot.
Cook on high.

Cover pot.
Bring liquid to a boil.
Add vegetables and leftovers.
Stir.
Recover pot.
Cook on medium for about 15 minutes.
Check vegetables, if they are soft, the soup is ready, if not, cook for 5-10 minutes more.



This recipe could make 6-8 servings.

Cool remaining soup. Freeze in portions.

One Cucumber, Many Uses

Update: minor adjustments to Quick Pickles measurements.


My biggest problem with fresh produce is I never use it all immediately and end up with waste. Generally, I dice or slice any remaining produce and freeze them.

But, cucumbers don’t freeze well. So, I have a few ways to prepare cucumbers for multiple uses without waste.



One Cucumber, Many Uses


With 1 large cucumber:

Wash and cut in half, in the middle.

With one half:


Peel.



Cut into slices (round).

1. Put slices into a jar of water to make cucumber water.

2. Dice remaining slices, place in a container.
Use with various sauces, see choices in Cucumber Bonanza post on this blog.



With the second half:


Cut into length-wise strips (julienne).
Cut away the seeds.
 

3. Place strips into a jar with spices to make quick pickles. See DIY Quick Pickles below.

4. Dice any remaining strips, save in a container. Use in cucumber salsas or cucumber salad like Apple / Cucumber Salad with Yogurt. See below.



Apple / Cucumber Salad with yogurt
Add diced apple with some diced cucumber. Add yogurt and stir to coat diced apple and cucumber.




DIY Quick Pickles

Ingredients:

Cucumber
A jar with a lid
Water
Vinegar
1-3 TBspns of sugar
2-3 Tspns of rock salt or salt


Process:

Wash cucumber.
Cut cucumber in half vertically in the middle.
Cut each half into strips.
Cut away seeds.
Add cucumber strips to jar.
Add water to jar until about 1/2 half to 2/3rds full.
Add spices.
Add vinegar.
Affix lid.
Shake jar to mix spices and liquids.
Store in frig.

I love soup. It is one of many comfort foods. This recipe is also frugal (Budget-friendly).

I appreciate Natasha's recipe. It inspired me to keep trying to make Chicken Soup. I had failed before so many times. While my recipe is a major departure from Natasha's, she pointed me in the right direction.

Now, I have an easy recipe, I can make with confidence.

I used leftover vegetables and vegetables I had on hand, so this recipe can have lots of variations.

I think potatoes add additional flavor and texture to the soup.


Ingredients:

1 Chicken bouillon cube
6 cups of water
1 dash of garlic powder (Optional)
1 dash of onion powder (Optional)
Ground Black Pepper (Optional)
Season to taste and GERD tolerance
Use vegetables on hand for example:
2 chayotes, 1 frozen, 1 fresh, sliced and diced
6 Leftover roasted potatoes, cubed
10 snack carrots, diced

*I added some leftover pastrami slices. (Optional)


Process:

Add 2 cups of water to a microwaveable container
Add 1 bouillon cube to the water.
Microwave on high for 2-3 minutes.
Remove and stir until bouillon cube has dissolved
Add stock to large pot.
Add 4 cups of water.
Add spices.
Stir.
Cover pot.
Cook on high.
Bring liquid to a boil.
Add vegetables.
Stir.
Recover pot.
Cook on medium for about 15 minutes.
Check vegetables, if they are soft, the soup is ready, if not, cook for 5-10 minutes more.



I serve soup with crackers.

I divide remaining soup into single servings in freezer containers and freeze for later use.

Hotplate: Another TWG Mini-Universal Casserole

As you can see, I am on a bit of a kick here, using a variety of combinations to make TWG mini-universal casseroles.

So far, this one is the best, though it could use more spices.

This is what Amy Dacyczyn, author of The Tightwad Gazette, is all about. She encourages people to be creative.


Hotplate: Another TWG Mini-Universal Casserole

I really like this combination of ingredients. The homemade cream sauce reduced the salt level because I did not use canned cream soup which contains a substantial amount of salt. I do not use salt in most of my recipes.



Pre-Preparation:

Make a batch of pasta per package instructions.
Make cream sauce if needed. (See Hotplate: White Cream Sauce (Medium) Recipe)


*Ingredients:

1/2 14.75oz Can of salmon, drained
1/2 Cup Canned mixed vegetables, drained and rinsed in can
1 Cup Pasta, cooked
3/4 Cup Cream sauce or use canned cream soup
1/8 Cup Almonds, sliced
2 TBspns Parsley, dry, crushed between palms
A few twists of Ground black pepper
Salt to taste (Optional)
Topping: 1/2 Cup or more Mozzarella cheese

Garnish: Parsley, dry, crushed


Process:

Add all ingredients to a small microwaveable casserole dish, except the topping and 1 TBspn of parsley.
Mix ingredients thoroughly.
Add topping by sprinkling cheese over the mixture.
Sprinkle 1 TBspn of parsley over cheese.
Cover with plastic wrap.
Microwave on high for 8 minutes.
Be careful when removing casserole from microwave. The plastic may release hot steam.
Be careful when removing plastic.
Sprinkle casserole with more parsley if desired.





*Note: This recipe is a great catchall recipe where you can use leftovers. I used a little leftover pasta and some leftover cream soup from a previous recipe.

Hotplate / Microwave: Pasta, White Beans, Spinach With an Anchovy Sauce


Ok, here’s how it often goes with me. I wanted a pasta recipe that used anchovies. I found this recipe (Broccoli Rabe (Rapini) and Pasta with White Bean and Anchovy Sauce) on Recipeland and thought I’d use it as a guide. I wanted to make a singe serving among other things.

I made a small bag of ribbon pasta. I’ll use the rest of the pasta elsewhere.

The recipe called for Broccoli Rabe. I assumed it was a type of greens. Because I did not have Rabe, I used spinach.

Recently, I had made a small batch of anchovy butter, so I used about a 1/3 of a cup of the anchovy butter.

I made a cup of vegetable stock with a vegetable bouillon cube and a cup of water. I only used about 1/3 a cup of the stock, I'll use the rest of the stock elsewhere.

Beans are plentiful here but there are not many choices of white beans are available. I had made a small batch of white beans previously and wanted to use them.

Because I had made several changes to the original recipe, I wasn’t sure it would turn out. One bite told me, it came out great.


I thank Jack Monroe for introducing me to the varied uses of anchovies.

Normally, when I use garlic powder, I have no ill effects i.e. acid reflux, but because I made several recipes with garlic powder, lately, my system was overwhelmed. So, now, I will reduce the garlic powder to a hint to none.


Pasta, White Beans, Spinach With an Anchovy Sauce
(Adapted from: Recipeland, Broccoli Rabe (Rapini) and Pasta with White Bean and Anchovy Sauce)


Makes a 1 bowl serving.


Pre-Preparations:

Make Anchovy butter:

Drain 1 tin of anchovies.
Add anchovies to a container with a lid.
Add 1/2 Cup butter.
Mix and smash the butter and anchovies until they are thoroughly combined and the anchovies are in tiny pieces.
Hold off on adding spices. Add them later when using the mixture as anchovy butter.

Make Vegetable Stock:

Add 1 vegetable bouillon cube to a cup of water.
Microwave on high for 2 minutes.
Remove and stir until the bouillon cube has dissolved.


Ingredients:

1 Small bag of pasta
1 dab of vegetable oil
1/3 Cup of Anchovy butter
1/3 cup of vegetable stock
2 Heaping TBspns of canned (rinsed in the can) or cooked white beans (any type)
1 Small dessert bowl of frozen spinach
a hint of garlic powder
Ground black pepper to taste
Garnish: Parmasan cheese



Process:


Pasta

In a medium pan, add enough water to cover the pasta.
Add a dab of oil.
Add pasta and cook according to package directions.
When pasta is done, drain and set aside.


Anchovy, Spinach and White Bean Sauce

Add anchovy butter to a small skillet.
Simmer and stir until anchovies have “melted.”
Add vegetable stock.
Add beans.
Add spinach.
Add garlic powder.
Add ground black pepper.
Stir to mix ingredients.
Simmer for 5 minutes.
Check and stir occasionally.
Use a spoon to mash the beans.
Simmer until beans are so soft they are easy to mash.
Continue to simmer. Y
ou want the mixture creamy and hot throughout.
To serve:

Fill a bowl about 2/3 full of cooked pasta.
Add the sauce.
Stir ingredients to mix them thoroughly.
Add garnish.

Tin Can Cook - Creamy 'Chicken' Soup

While visiting my family, I got Jack Monroe's Tin Can Cook Cookbook and went a little crazy making a few of their recipes.


Jack Monroe is an incredible human being. She struggled through severe poverty with her young son for several years. During those years, she blogged about her experiences and her efforts to fed her child. Eventually, she caught the attention of the media and was approached to write a cookbook. They did.

While the cookbook was a "success", Jack still struggled in poverty. Since then, she has written several cookbooks including Tin Can Cook Cookbook. This book is special because Jack wrote it for others who have to survive on food bank donations. He also started a GoFundMe account so her followers could donate money to purchase the cookbook for food banks in the UK.

The GoFundMe account has purchased 1000s of cookbooks for several foodbanks and their clients.


Creamy Chicken Soup

I loved the idea of this soup. It sounded easy, healthy, and tasty. But, sadly, I could not find pease pudding. So, I sorta learned how to make it by accident.


DIY Pease Pudding

Because I could not find pease pudding, my sister got me a small bag of split yellow peas.

I had no idea what to do next, so I put some in a bowl, covered them with water, then put the lid on the bowl and stuck them in the frig.




I went back to the frig several times to add more water as the peas did soak up the water but the peas remained hard.

The next day, I decided to put the peas in a pot, cover them with water and, bring them to a rapid boil on my sister’s gas stove. Then, I reduced the temperature to simmer.

At first, the pot boiled over with a white foam. I was not expecting this. I spooned off the foam and continued to simmer the peas.





After over an hour, the peas finally became mushy and the water got thick.




I did add some turmeric but I actually liked it plain.

I wasn’t ready to make the soup, so I poured the mixture into a bowl with a lid, let it cool, then added the lid and put it in the frig.



Creamy Chicken Soup
Again, I noted metric conversions and my substitutions.


Ingredients:

Estimated measurements for milk and bouillon

220g Pease pudding, 220g = 8oz
-I actually made a whole lot more, see picture





1 can Hot Chicken bouillon est 14oz
-I used 1/2 a chicken bouillon and a 1/2 can of LO creamy chicken soup

Consider a vegetable bouillon cube to keep soup vegetarian.

1 can Milk est 8oz
-I eyeballed the amount of milk because I had used a lot of pease pudding. I added enough milk to make the mixture soupy.

1 Tbspn Garlic paste
-I used a Tspn of minced garlic

I added 6-8 dashes of an onion and herbs spice
I added about a cup of minced cooked chicken, optional.
Black pepper, optional

Remember, other than the chicken bouillon cube, the original recipe did not have any chicken.



Process:

Add pease pudding to medium sized pan.
Add creamy chicken soup.
Add bouillon.
Add 1/3 of milk.
Add minced garlic.
Stir and mix well.
Cook on medium on hotplate.
Stir vigorously to make the mixture smooth.
Continue stirring
Gradually add remaining milk.
Add chicken bits.
Reduce heat to low, so milk does not boil.

Before serving, I increased the temperature to get soup warm-hot just before serving.




When serving season with ground black pepper.

Toaster Oven: Toasted Bread Dipping Circles


I had collected several bread ends and they were stored in the freezer. Normally, I would have used the bread ends in a Bread Pudding but this time I craved a snack.

So, I cut out the middle of each bread end with a glass and made a batch of toasted bread circles. Then, I made a dipping sauce. Quite tasty. Necessity is indeed the Mother of Invention.


Toaster Oven: Toasted Bread Dipping Circles


Ingredients:

Bread ends
A round glass

Sauce:

Olive Oil
Oregano, crushed, dry
Ground black pepper, to taste (Optional)


Process:

Place bread ends on a cutting board.
Place glass in the middle of bread slice.
Push down and rotate the glass to cut a circle of bread out of the slice.




Place slices in toaster oven.
Toast until light brown and crisp.




Make sauce.

All I did was pour a bit of olive oil into a bowl and added some ground black pepper and oregano, then I stirred the mixture.

Dip the toasted bread circle into the sauce and enjoy.






I also toasted the edges of the leftover bread circles. I think I will use them to make bread crumbs.

Mayo


Process:

Take a bowl, add a few tablespoons of cooked rice.
Add a few tablespoons of cooked chicken.
Add a dessert bowel of frozen spinach.
Add 1 tablespoon of Mayo.
Stir ingredients thoroughly.
Place bowl in microwave. Cover.
Microwave on high for two minutes.

Stir prior to serving.

Toast Toppings inspired by WW Freestyle Cookbook


My sister has had great success with Weight Watchers (WW). She had an extra WW cookbook, so I thought I’d try a few recipes.

What follows are my recipe experiments inspired by or adapted from several Weight Watchers (WW) recipes as toast toppings.

In many recipes, I am trying to achieve several purposes. One, I am trying to adapt recipes to fit a GERD (Gastrointestinal Reflux Disease) menu. Two, I am trying to make low calorie, healthy recipes.


Toast Topping - Chickpea Mixture
(Adapted from: The Essential WW Freestyle Cookbook, p126)

Opps, I see I use Chickpeas, Hummus and Garbanzo Beans interchangeably.


Ingredients:

2 slices of multi-grain bread
1 can chickpeas, drained
2 dashes onion powder
1 capful lime concentrate
2 TB olive oil
1 dash garlic powder
1 dash hot sauce
Topping: Paprika

*GERD-Friendly - using onion or garlic powder sparingly does not seem to affect my acid production like real onions or garlic do.


Process:

In a bowl, mash chickpeas.
Add all ingredients except paprika. Mix thoroughly.
Toast bread on both sides in a dab of olive oil in a skillet.
Spread 1 TB of chickpea mixture over top of each toast slice.
Sprinkle paprika on top.

This was ok. I would have preferred a more creamy mix.

Variation: Going off the above recipe and taking tips from The Essential WW Freestyle Cookbook, Chicken Sandwiches with Avocado “Mayo”, p16. I made the following:

I toasted two pieces of multi-grain bread.

Then layered them with about 1 TB of chickpea mixture from recipe above to which I had added a TB of mayo and mixed thoroughly.

Then I topped that with a layer of my Avocado Mixture, then sprinkled paprika over the top and added a bit of ground black pepper.

With the Avocado Mixture, I was liberal with the parsley and lime juice. The lime juice gave the whole topping a fresh flavor.


Scrambled egg with Spinach, and Avocado Mixture
(Adapted from WW Egg and Avocado Toasts with Smoked Salmon, p161)


 Ingredients:

1 slice of multi-grain bread
Dollop of Olive oil
1 egg
4 TB frozen spinach (there will be leftover spinach)
1 TB Leftover avocado mixture
Paprika
Ground black pepper
Parmesan cheese


Process:

Toast bread in skillet, first. Remove and place on plate.
Scrambled egg with some avocado mixture in skillet. Add more olive oil if needed.
Microwave frozen spinach on high for about 3 minutes.
Top toast with a layer of cooked spinach, about 1 TB
Top spinach with layer of egg/avocado mix.
Sprinkle paprika, ground black pepper and Parmesan cheese over toppings.
Optional: add 1 TB of canned salmon, drained, on top



Toast Topping - Leftover Corn Tortillas and more
(Inspired by WW Edamame Tostadas p116)

I hope this inspires readers to look at their leftovers differently.

Ingredients:

1 Leftover corn tortilla
Dollop of Olive oil
Leftover spinach/avocado mixture
Leftover hummus/mayo mixture
1 egg
Ground black pepper
Parmesan cheese
Salt/macha mixture


Process:

Took a corn tortilla from a doggie bag from previous meal and fried it in a skillet with a bit of olive oil.

Spread a layer of leftover spinach/avocado mix over top of tortilla.

Added a layer of leftover hummus/mayo mixture.

Topped with a poached egg (Business Insider Style, add 3 TB water to a small bowl. Crack egg into bowl. Cover. Microwave on high for 40-45 seconds).

Sprinkled with ground black pepper, Parmesan cheese, and salt/macha mixture.

This was a hardy, tasty mini-meal. I am guessing it cost less than $1US.
