A Frugal Cup of Coffee

I have some ground coffee. I have a French Press but I only wanted to make one cup of coffee.

The ground coffee I have has a weak flavor, so what I did was use a tea-spoon (meant for loose tea) and grabbed a tea-spoon full of ground coffee, placed it in a cup and added boiling water.

Then, I stirred it and pulled the spoon out to let it drip and then stirred it some more etc.

Then, I added 1/2 teaspoon of instant coffee, stirred and got a good cup of coffee. Used the same grounds twice for another cup.

Sweet Iced Neth with Spices (Faux Mango Lassi)

Ethan Phillips (Neelix) and William J. Birnes have created a delightful cookbook. Ethan / Neelix uses his experiences as chef on Star Trek Voyager to talk about various "recipes" he made during the show and recipes he gathered from crew members from all the Star Trek series.

It's like an anthropological cookbook because Ethan / Neelix weaves in stories about the history of the recipe and the ingredients. I must say I am glad that I don't really need any bloodworms or bugs to make most of these recipes.

For Sweet Iced Neith, Ethan / Neelix talks of his family adventures exploring the countryside near their home, discovering "The world is a book, and those who do not travel read only a page."

I rarely have all the ingredients called for in a recipe and I often want to make a smaller amount.

In this recipe, I used ingredient ideas from two Star Trek Cookbook recipes, Sweet Iced Neth and Spiced Iced Neth.


Sweet Iced Neth with Spices (Faux Mango Lassi)

Ingredients:

1/2 Cup Yogurt, plain
1/2 Cup Milk
1/2 Tspn Ginger powder
1/2 Tspn Cardamon powder
1/4 Tspn Cumin powder
5 Full TBspns Canned Mango juice with pulp, crushed
1 TBspn Honey


In a large glass, add ingredients.
Use the spoon to smash the mango pulp.
Stir and mix ingredients well.







 #GERD-friendly - this recipe is GERD-friendly for me, if I use lactose-free milk.

DIY Pineapple Lassi

I enjoy Indian food but because I am not a good cook, I have yet to try and make an Indian recipe. But, I did make my own version of a Lassi. I made this recipe before doing any research because it came out fine for me. But, I see I barely come close to a true Lassi recipe. Maybe next time, I will try adding more spices.


DIY Pineapple Lassi

Ingredients:

3 oz Yogurt, plain
3 oz Milk
A dollop (approximately 1 oz) or more of Pineapple juice (leftover from canned pineapples or regular juice), to suit your taste
Garnish: a dash of cinnamon powder (Optional)




Process:

Add ingredients to glass.
Stir.
Add ice, if desired.
Add garnish.

Cool Off with a Spritzer Festival!

Spritzer Festival!

Spritzers cool you down, and have great flavor with fewer calories.

Your basic recipe is:

Ingredients:
8oz glass
Ice cubes
Carbonated water
Flavoring
Garnish: Lime slices, orange slices, pineapple chunks, apple slices, and more (optional)

Process:
Fill glass with ice.
Fill glass 2/3rds to 7/8ths with carbonated water.
Add flavoring.
Stir.
Add garnish, your choice (optional).



Ginger Ale Spritzer



Spritzers (Left to Right): Apple Juice, Coconut Cream, Coffee, Grapefruit, Mandarin, Jamaica, Tonic Water, Chocolate Sorbet, Mango, Cola Light, Orange Juice, and Ginger Ale



Not Pictured:
Decaffeinated coffee with a dollop of chocolate sorbet
Ginger Root with a bit of sugar
Grape Juice
Lime Juice
Peppermint Tea
Pomegranate Juice


Other flavor ideas:
Watermelon
Strawberry
Root Beer
Dr. Pepper
Cherry
Lemon/Lime
Vanilla
Guava
Melon
Passionfruit
Papaya


Variation:
Beer Spritzer
Fill glass with ice.
Fill 2/3rds with carbonated water.
Add a bit of beer.
Add a capful of lime juice.
