Refrigerator: Carrot Relish

I was surprised, this simple recipe is quite tasty and a great addition to many recipes.
 
I, first, saw Chef Susanne Duplantis on the short-lived Netflix Cooking Show Leftovers. A search found her website, Makeover My Leftover.

I will never be a real cook, so I depend on the advice and ideas of real cooks and chefs.

This is my first Chef Duplantis's recipe to try. Of course, I had to adapt the recipe based on the tools and ingredients I had.


Ingredients:

3-4 TBspns grated carrot, peeled
1/2 Tspn Lime Juice
Lime Zest*
1/2 TBspn sugar


Process:

Peel carrot with grater.
Grate carrot into a bowl.
Add the lime juice and zest.
Add sugar.
Stir ingredients thoroughly.
Cover and refrigerate overnight.
 
Made a turkey lunchmeat quasidilla with one slice turkey lunchmeat, shredded cabbage and 1/2 TBspn carrot salsa. It was great.
 
Lime zest is grated lime peel.

Refrigerator: Overnight Seeded Oats

Bananas! Thanks to some friends, I have lots of bananas!

I will be happily trying to make the new banana bread, puddings, cakes, bread puddings, cookies, and ice cream recipes I found.
 
In addition, I love using bananas as a topping.
 
I have also developed a fondness for overnight oats, thanks to Jack Monroe and others. The various seeds in this recipe make an interesting combination.
 

Refrigerator: Overnight Seeded Oats
 
 
Pre-preparation:
 
First, make a batch of seed mixture:
 
Seed Mixture:
 
4 TBspns Flaxseeds
4 TBspns Sesame seeds
2 TBspns Chia seeds
2 Tsps Cinnamon
A Pinch Salt (Optional)

 
Other ingredients:
 Oats
2-3 TBspns Coconut creme
Water as needed
Or Milk or Milk alternative
 
Toppings: fresh, canned or dry fruit; or nuts; peanut butter; honey; jam; jelly; or syrup.
 
 
Process:
 
Make seed mixture.
Add a thick layer of oats on the bottom of a small bowl with lid.
Sprinkle some of the seed mixture over oats.
Add 2-3 TBspns coconut creme.
Add enough water to cover oats.
 
Or
 
Add milk or milk alternative to cover oats.
Stir the mixture thoroughly.
Add lid.
Refrigerate overnight.
 
Upon serving, add additional water, or milk, or milk alternative to moisten oats.
Add topping of choice.

Refrigerator / Toaster Oven: Polish-Style Sardines on Toast

It’s 2:30 in the morning and I could not get a line of dialogue out of my mind. I had been watching Agatha Christie’s Hercule Poirot’s BBC TV show, “Elephant’s Can Remember.” A character in the story had said, “I had sardines on toast.”

Because I enjoy British dramas, I occasionally focus on the food mentioned in the stories.

I laughed, nothing says British cuisine like “Sardines on Toast.” It’s simple, cheap and sounds bland.

But, I like sardines and knew I could find some “fancy” recipes for “Sardines on Toast.”

The recipe I choose (link below) is an enjoyable read. Also, the author provides more information and ideas on ways to make and serve “Polish-Style Sardines on Toast.”
 
 
Polish-Style Sardines on Toast

Ingredients:

1 Slice Multigrain bread, toasted
Mustard, or Butter, or Veg oil

1 Large sardine from 425g can of sardines
2 TBspns DIY Pickle Relish
1 Tspn Onion flakes
2 Tspns Dry Parsley
1 TBspn Ketchup
1 TBspn Mayo
Salt to taste
Ground Black pepper to taste
1/2 Capful Lime juice

Optional: add diced radishes.
 

Process:

Spread mustard or selected spread on toast.
Place toast on a plate.

In a bowl, add 1 sardine, pickle relish, onion flakes, parsley, ketchup, mayo, salt and pepper.
Mix, stir, and smash ingredients until ingredients are throughly mixed and smooth.

Spread mixture over toast.
Sprinkle with lime juice.
Sprinkle a little parsley on top.
 
Refrigerate any remaining spread.

Refrigerator: Mango Breakfast Bircher

It was the title of Jack Monroe's recipe, Mandrin Breakfast Bircher, that grabbed my attention. What’s a bircher?

Then, I looked at the ingredients and processes and asked myself, "Do I have the ingredients? Can I make it?"

I had everything but the mandarin oranges but I am on a mango kick, at the moment, so using canned mango slices seemed an ideal substitution!

 
 
Ingredients:

Oats
Yogurt, plain
Milk (dry milk mix or other)
Fresh or canned mango, drained, sliced
Honey (Optional)
Nuts, crushed (Optional)
Note: Use any fruit you desire.
 
 
Process:
 
In a small bowl with a cover, add a thick layer of oats.
Pour in 2 oz or more yogurt.
Pour in 2 oz or more milk.
Liquids should cover oats and a bit more. Oats will soak up the liquids overnight.
Stir ingredients thoroughly.
Cover bowl and store in refrigerator overnight.
When are ready to eat, if oats are too dry, add more milk.
Top with fruit slices.
Optional: Add honey or nuts, if desired.
 

Jack makes several oats recipes that are similar like: porridge, overnight oats, and bircher.

Funny thing, I never liked hot "porridge" but I do like Jack's cold oats recipes.

Refrigerator: Mug O'Blueberry Cheesecake

Finally, I found a great recipe to make a single serving of refrigerator cheesecake.
 
Refrigerator: Mug O’Blueberry Cheesecake
 
 
Pre-Preparation:
 
I keep dry blueberries in stock. But, if you have fresh blueberries, you can skip this step.
 
Soak 1-2 TBspns dry blueberries in water overnight.
OR
Put blueberries in a cup, add enough water to soak them. Warm blueberries briefly in the microwave (20-30 seconds). Allow to sit at least 30 minutes.
 
 
Ingredients:

2 Sugar Cookies
2-3 TBspns Cream cheese
1 TBspn Yogurt, plain
1/2 Tspn Lime zest
3 Tspns Lime  juice
6-8 TBspns Blueberries, dry, soaked and drained or fresh
 

Process:
  • In a cup, stir cream cheese, yogurt, one Tspn lime juice and zest together. Reserve.
  • Place one cookie in bottom of mug or cup.
  • Pour one Tspn lime juice over it.
  • Spoon 1/3 cream cheese mixture over the top.
  • Place second cookie on top.
  • Pour the remaining lemon juice over cookie.
  • Spoon remaining cream cheese mixture over the top and smooth out the surface.
  • Place the blackberries (drained) over the top of the dessert.
  • Refrigerate for one hour before serving.
